The professional stainless steel extraction hood is indispensable above any cooking line: it captures the grease, the vapours, the smoke and the smells to preserve a healthy air, protect the equipment and offer comfortable working conditions. Available from 1 to 3 metres and in a depth of 70 to 90 cm, it is sized to cover all of your appliances.
This is the first question to ask. A hood with an integrated motor extracts by itself and is suitable when you have no existing extraction system. A hood without a motor connects to an extraction network already in place (remote motor on the roof, extraction turret): quieter in the kitchen and often required in buildings. An efficient hood must overhang the cooking zone to capture the smoke before it disperses. This is why it exists from 1 to 3 metres in length and from 70 to 90 cm in depth: it is chosen according to the width and the depth of your line of appliances (fryers, griddles, ranges). A hood that is too short lets vapours and grease escape into the room.
Professional hoods are generally fitted with stainless steel baffle filters (so-called labyrinth filters): the air is forced to change direction abruptly, which makes the grease deposit in the filter rather than in the duct. These filters are removed and cleaned (often in the dishwasher), an essential step for the performance and the fire safety.
